Who is the Meal Planning Mom – The mom behind the website?

I saw this on another blog and thought it was great.

50 (make that 25) things about me that may or may not surprise you…

I have a Webkinz and I log in almost every day.

I love frozen French fries.

My favorite candy is Sour Patch Kids and I border on addicted on them.

I don’t always feel like cooking.  Even I have days when I dread it.

I didn’t see snow fall from the sky until I was 26.

If you put a US map in front of me, I might know where 10 states are.  And don’t ask me to point out the Atlantic or Pacific Ocean.

I get lost even with a GPS.

I was willing to have as many kids as necessary to ensure my daughter had a sister.

From the time I thought about MenuForTheWeek.com until the time I bought the domain name was less than 15 minutes.

My 6 year old is convinced that I’m famous and tells everyone she meets – embarrassing.

I work 2 days a week as a geology tech for an oil company.  It’s the only non-domestic thing I do.

I once had a cookie business that did very well.  I was maxed out at the number of cookies I could make.

I love public speaking, which is the number one phobia; flying, not so much.  I’d actually rather speak in front of 10,000 people than get on an airplane.

I used to belly dance.

My sisters and I all have matching tattoos on our back.  I still claim mine was a result of peer pressure from my middle sister – she’s very convincing.  I do not, however, regret it.

I cook a lot of things that never make it to the menu – flops.  We’ve even had to order pizza.

I love getting new cleaning supplies and trying them out.  That makes me outright weird.

I have a bucket of list of things I eventually want to make; homemade flour tortillas are at the top.

I hate drama on any level and go to great lengths to avoid it.

My number 1 goal is to have a bestselling cookbook one day and endorse a major brand of food.

I could put cream cheese in everything I cook and be happy with it.

If I could only have 1 food for the rest of my life, it would be gumbo – which ironically enough is too time consuming to put on the menu.  Next would be boiled crawfish.  They might be first if they weren’t so hard to peel.

I truly believe that food cooked with love tastes better.

I’ve had to eat the words, “My kids will never….,” more times than I care to count.

I’m OCD about dinner going on the table at 6:00.  It’s always within 5 minutes of 6:00.

This list started out as 50 things about me, but I got bored with myself around 25.  I feel blessed to have a relatively boring life (that drama thing.)

So, now you can put some facts behind the face.

FIVE QUESTIONS ON FAMILY DINING WITH A BUSY MOM:

1. What do you enjoy most about eating a family meal together?

I love the ritual of connecting with my family.  Some meals it’s just me and my son, while other times we eat with my mom, sister, and nephew.  Sometimes we will have a moment of silent prayer or will bless our food and give thanks.  We also share our highs and lows of the day, always starting with our “low.”  All of this makes a family meal so much more than just a time to eat – it becomes a celebration of family and life.

2. What is your #1 go to emergency meal?

Well, I have to share two, because it depends on if I need something that’s premade, or if I’m going to cook.

If I’m in need of take-out, I love picking up a roasted chicken or turkey breast from the grocery store.  They’re cooked and ready-to-eat, so I pair one of these with a veggie and I feel good that I’m able to serve a no-fuss, healthy meal.

If I’m not too wiped out to cook, I love making shells and meat sauce.  I get a box of whole wheat pasta shells, a package of ground turkey, and low sugar pasta sauce.  My whole family loves this.  It is DE-LISH!

3. What is the best piece of advice you’d give to other busy moms who are trying to savor the dinner hour?

Make dinner time a priority and eliminate all distractions.  Bring a sense of fun and creativity to the table.  Trust me, you’ll be a superstar.

What is your family’s favorite dish?  Would you be willing to share the recipe with our blog readers? (If so, please include. if not, just describe your meal)

Tacos!  A bit time-consuming to do tacos the right way, but SO worthwhile.

Ingredients:

  • Vegetable oil
  • 2 pkgs. Corn tortillas (premade shells are NOT the same)
  • 1 lb. Lean (4% fat) ground beef
  • Lettuce, shredded
  • Tomatoes, diced
  • 1 lb. Cheddar cheese, shredded
  • Light sour cream
  • Taco Sauce

Brown ground beef, adding any seasonings you like (we stick with unseasoned.)

In small pan, add about ½ inch of vegetable oil – enough to cover a tortilla folded in half.

Heat up your oil till the oil sizzles when you add a tortilla. (No, I don’t check temp!)  Fry shells by folding tortilla in half and flipping every few seconds until tortilla is semi-hard.

Build your tacos by adding beef, lettuce, tomato, cheese, sour cream, and taco sauce. Enjoy!

5. If you could eat only one food for the rest of your life what would it be and why?

Just one?? I think I would go nuts eating only one food.  I love variety.  However, I suppose I would eat eggs.  I can fix ‘em all kinds of different ways.  Yeah, probably eggs.

Location: Littleton, Colorado
Kids names and ages: Landon 3, Luci 5 months
Mom’s occupation: Stay at home mom, I am a jack of all trades!

FIVE QUESTIONS ON FAMILY DINING WITH A BUSY MOM:

1. What do you enjoy most about eating a family meal together?

I love that we get to spend time together and talk to each other about our day.

2. What is your #1 go-to emergency meal?

Hamburger Pizzas. They are fast to make and the ingredients are cheap.

3. What is the best piece of advice you’d give to other busy moms who are trying to savor the dinner hour?

I am not the best cook, so many of our dinners turn out burnt.  With that being said, even if your dinner does not turn out the greatest enjoy the time you have to spend with your family.  Time goes fast and the dinner hour might be the only hour you have to spend with your family, so take advantage.

4. What is your family’s favorite dish?

Chicken O’Brien is our family’s favorite dinner.  It is chicken breast under potatoes O’Brien with cheese melted on top.

5. If you could eat only one food for the rest of your life what would it be and why?

I love Mexican food, so probably any Mexican dish. It is very filling and salty! It is also pretty fast and easy to make.
