The Perfect Christmas Cookie – Oats, Cranberries & White Chocolate (Oh My!)

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups quick cooking oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups dried cranberries
  • 1 cup white chocolate chips

Directions:

  1. Beat butter, sugars, eggs and vanilla for 5 minutes. In a separate bowl, combine oats, flour, baking soda, baking powder and salt.
  2. Gradually add dry ingredients to butter mixture.
  3. Mix in white chocolate chips and cranberries.
  4. Drop by spoonfuls onto greased cookie sheets and bake for 10 minutes at 350 degrees F (175 degrees C).
