Feta Chicken Pitas

Makes 4 servings Start to Finish: 30 minutes

“This could not be any better or easier.  I wasn’t sure how my kids would like it, but they loved it.”

1 lb ground chicken

1 8-ounce container feta cheese crumbles – divided

1/2 cup bread crumbs

1 cucumber – peeled and diced

1/4 cup Italian dressing

1 large tomato – diced

1 package pita bread pockets – heated for 30 seconds in microwave


1 8-ounce container hummus

1)  In a large bowl, combine chicken, 1/3 cup feta cheese and bread crumbs.  Mix well and make palm size patties.  Cook in a large skillet (non-stick if available) for 6 – 8 minutes over medium heat on each side or until no longer pink.

2)  While patties are cooking, combine cucumbers and Italian dressing.

3)  Serve patties inside pita pocket with cucumbers, tomato and remaining feta cheese.

Cut remaining pita bread into triangles and serve with hummus.
