“When I make these for breakfast, my kids eat them all day long – snack, lunch, snack again.”
1/2 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter
1/4 cup butter – melted
1 cup milk
1 large Granny Smith apples – shredded
1 1/4 cups flour
1 tablespoon baking powder
1/4 teaspoon cinnamon
1 tablespoon sugar
1 teaspoon vanilla extract
1) In a small bowl, combine brown sugar and 1/2 teaspoon cinnamon. Cut in 2 T butter until crumbly. Set aside.
2) In a large bowl, combine butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture.
3) Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Sprinkle about 1/2 tsp of topping over top of each pancake before flipping. Brown on both sides and serve hot with syrup or whipped cream.
*The pancakes are really sweet and don’t need a lot of syrup. My family prefers whipped cream.
