“I was in the mood for comfort food after a stressful week, so I came up with this delicious recipe. It did indeed bring me comfort.”
2 boneless skinless chicken breasts (or thighs)
3 cups egg noodles
1/4 cup butter – divided
1/2 onion – chopped
2 stalks celery – chopped
1/2 cup flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 cup bread crumbs
1) Boil and chop chicken. In a separate pot, boil noodles according to package.
2) Preheat oven to 350.
3) In a large skillet, over low to medium heat, melt 1/8 cup of butter (2 T). Saute onions and celery until clear. Add remaining butter and let melt.
4) Whisk in flour and milk. Continue stirring until smooth. Add salt, pepper, onion powder, and garlic powder.
5) Combine chicken, noodles, and sauce. Pour into a large casserole dish. Top with breadcrumbs.
6) Bake for 25 minutes.
