As Heard On WROK – Cheddar Chicken O’Brien

Makes 4 servings
Start to Finish: 30 minutes

“I love this.  It’s 1 skillet with 4 ingredients.  What can be better than that?  I never knew frozen potatoes with onion & bell peppers were called Potatoes O’Brien.”

4 boneless skinless chicken breasts
Garlic powder
Onion powder
6 slices bacon
1 28-ounce bag frozen  potatoes diced with onions and green bell peppers
1 cup shredded Cheddar cheese

1)  In a large skillet, cook bacon until crisp.  Remove bacon and crumble.  Discard grease, but do not wash skillet.

2)  Season chicken with salt, pepper, onion powder, and garlic powder.  Add chicken to skillet; over medium heat cook 7 minutes on each side or until done.  Remove chicken and set aside.

3)  Add potatoes to skillet.  Cook and stir about 5 minutes until heated through.  Stir bacon crumbles into potatoes.

4)  Place chicken on top of potatoes.  Sprinkle cheese over chicken and potatoes.  Turn heat off and cover until cheese is melted – about 3 minutes.
