As Heard On WROK – Southwest Chicken Burgers

Makes 4 servings
Start to Finish: 30 minutes

“I was shocked at how good this is.  I gave myself several pats on the back for this one.  I expected it to be pretty good, but it was more like amazing.  Don’t forget, grilling is certainly an option.”

1 lb package ground chicken
1 egg – slightly beaten
1/4 cup crushed tortilla chips
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
6 slices pepper jack cheese
1 package hamburger buns – toasted
1 large avocados – halved, peeled, and sliced
1 head iceburg lettuce – 6 leaves peeled off
1/4 cup salsa

1)  In a medium bowl stir together egg, tortilla chips, chili powder, salt, and pepper.  Add chicken; mix well.  Mixture will be wet and sticky.  Shape chicken into 6 half inch thick patties.

2)  In a large non-stick skillet or griddle, cook chicken patties for about 4 – 5 minutes on each side – until golden brown and cooked through.  Top with cheese immediately.  Serve burgers on toasted buns; top with avocado slices, lettuce, and salsa.

*** Kid friendly alternative: Substitute Monterey Jack cheese for Pepper Jack cheese.
