As Heard On WROK – Decadent Shrimp & Linguini

Makes 6 servings
Start to Finish: 30 minutes

 

“No one else in my family likes shrimp, so I have to make this ALL for myself.  It’s so good and worth it.”

2 lbs medium shrimp – peeled and deveined
1/2 stick butter
1/2 cup red onions – finely diced
3 cloves garlic – minced
2 tablespoons tomato paste
1 cup white wine – divided
1/2 cup water
1 teaspoon salt
2 tablespoons olive oil
Black pepper – to taste
1/4 cup parsley – finely chopped
1/4 cup shredded Parmesan cheese
1 lb linquini noodles – cooked and drained

1)  In a large skillet, melt butter over medium heat.  Add shrimp, onions, and garlic.  Saute until shrimp is cooked (no longer clear.)

2)  With heat still on medium, add 1/2 cup white wine.  Stir well, scraping bits from the bottom of the pan.  Stir in tomato paste.  Continue stirring to dissolve tomato paste.

3)  Add remaining 1/2 cup of wine, allow to come to a boil – stirring often.  Continue boiling and stirring – add water, salt and pepper.  Allow to boil softly for 5 minutes – stirring often.  Add olive oil, boil and stir for an additional 3 minutes.

4)  Remove from heat and serve over cooked linguini.  Top with parsley and parmesan.

*Save yourself an extra trip to the liquor store and buy white cooking wine at your grocery store.

    Those cooking wines are usually LOADED with salt, so add salt and pepper ‘to taste’! This recipe sounds like a winner though!
