As Heard on WROK – Creamy Chicken Penne

Makes 4 servings
Start to Finish: 30 minutes

“I was hesitant to make this because it sounded like so many of my other pasta dishes.  I was completely wrong.  It tastes nothing like anything I’ve ever made and it is delicious.  I claimed the left-overs for 2 lunches and loved it all 3 times I ate it.”

1/2 1 lb box penne pasta noodles – it only comes 1/2 lb boxes, but you only need half
2 boneless skinless chicken breasts – chopped into bite size pieces
1 tablespoon olive oil
1/2 red bell pepper – finely chopped
4 cloves garlic – minced
2 tablespoons butter
1 tablespoon flour
1 cup milk
4 ounces cream cheese
1/2 cup grated parmesan
3 green onions – finely chopped
Salt and pepper – to taste

1)  Cook pasta according to package and drain.

2)  Meanwhile, heat olive oil in a larget skillet.  Cook chicken until done.  Turn heat to low – medium; add garlic and red bell pepper and cook for an additional 2 minutes.  Remove chicken and peppers from pan.

3)  With heat still on low – medium, melt butter in the same skillet.  Whisk in flour until smooth.  Gradually stir in milk.  Add cream cheese and parmesan.  Continue stirring until completely smooth.

4)  Turn off heat.  Add in chicken, pasta, and green onions.  Mix well and serve immediately.
