As Heard on WROK – Strawberry Upside Down Cake with Blueberries for the 4th!!

Makes 15 servings
Active Prep Time: 20 minutes  Bake Time: 30 minutes

“This is definitely my favorite pot-luck dessert.  If you email me about what to bring to a pot-luck, this is what I will recommend.  If you are making this for the 4th, add a touch of blue by adding blueberries.”

1 lb strawberries – diced into small pieces
1 pint blueberries
1 6-ounce package strawberry jello
1 box yellow cake mix batter prepared as directions on box
1 16-ounce container cool whip topping

1)  Preheat oven to 350.

2)  Spread diced strawberries and blueberries in a single layer on the bottom of a 9×13 inch baking pan.  Evenly sprinkle strawberries and blueberries with the dry gelatin power.

3)  Prepare the cake mix as directed on the package, and pour on top of the powdered fruit.  Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 to 40 minutes. Cool in the pan for 15 minutes.

4)  Run a knife around the pan to loosen the sides, and turn the cake out onto a serving tray.  Once cooled, evenly spread cool whip topping over top and sides of cake.  Store cake in the refrigerator.
