“This is the perfect dish to make for company. It makes a ton and it tastes so yummy. My neighbor made this last year for our crawfish boil and it was almost as big of a hit as the crawfish.”
3 boneless skinless chicken breast halves – cut into bite sized chunks
1 lb smoked sausages – sliced – andouille if you can find it
2 tablespoons olive oil
1/2 onion – chopped
1/2 green bell pepper – chopped
5 cloves garlic – minced
1 15-ounce can diced stewed tomatoes
2 – 3 teaspoons cajun seasoning
1 lb penne pasta noodles
1) Boil pasta.
2) In a large skillet, over medium heat, cook sliced sausage and chicken chunks until chicken is cooked through. Drain grease and spoon chicken and sausage onto a plate. Set aside.
3) In the same skillet, over medium heat, pour olive oil into skillet. Saute onion and bell pepper for 3 minutes. Add garlic and saute for an additional 30 seconds. Add tomatoes with juice and cajun seasoning. Stir well.
4) Add chicken and sausage back into skillet. Let simmer on low for 5 – 10 minutes. Add to cooked pasta and mix well. Serve warm and delicious.
