Vitamin Absorbing Foods – What’s the point in eating them if we aren’t absorbing them?

Eat your Vegetables!  Your mom wasn’t kidding when she told you to make sure you eat enough fruits and veggies.  In order to perform at the highest level, our bodies need a sufficient amount of vitamins and minerals.  Vitamins help everything in our bodies from our hair, eyes and nails to our nervous system, blood cells, teeth, bones, and the list goes on.

 Since this is much easier said than done, I’ve compiled  a list of 3 simple foods that can help your body better absorb various vitamin.  This makes better use of the ones we intake.

1)  Green, leafy vegetables are packed with vitamins and minerals.  Leafy greens contain vitamin C, E, and K.  Try substituting your regular salad mix for a darker one.

2)  Fish is also packed with vitamins.  Vitamins B6, B12, and D are found in fish and that’s just a few in a long list of beneficial vitamins.  Look for sales in your local seafood department.  You can usually get great deals on a variety of frozen and fresh fish.

 3)  Blueberries are my favorite in this list.  They are a great source of vitamin C, manganese, and they are packed with antioxidants.   Did you know it’s actually the dye that is released from the blueberries skin that is the most valuable property in the berry?  Don’t forget about frozen blueberries when fresh ones are out of season.  They are great in smoothies.
