I’ve found yet another awesome use for cookie cutters. These fun little shamrocks will have everyone feeling lucky. The trick is to use one less cup of rice crispy cereal than the usual recipe calls for. You will want to use 3 T of butter, 1 bag of small marshmallows, and 5 cups of rice crispy cereal. Melt your butter and marshmallows in a small sauce pan. Add several drops of green food coloring and mix well. Add to rice crispy cereal and stir well. Pat mixture down into a 8 x 13 inch sprayed pan. Let set for at least an hour. Turn pan out onto a large sheet of parchment paper. Press cookie cutter into mixture to form shapes. Gently press rice crispies from cookie cutter. Voila – cute, easy, & delicious! My favorite kind of treats.
