Giant Turtle Cookie – As Heard on WROK

Makes 8 servings Active Prep Time: 10 minutes  Bake Time:  12 – 15 minutes

“Treat yourself and your family to incredibly easy and delicious dessert.  It will be a huge hit.”

1 18-ounce tube chocolate chip cookie dough

12 – 15 bite size milky way bars – You can use any size.

1/2 cup pecans – chopped (optional)

1)  Preheat oven to 350 degrees.

2)  Allow cookie dough to soften.  Using hands flatten dough into a big round circle on a large cookie sheet.  Your dough should be about 1/4 to 1/2 inch thick.

3)  Cut bite sized candy bars in half and press into cookie dough.  Sprinkle pecans on top.  Bake in preheated oven for 12 – 15 minutes.  The middle will seem raw, but allow it to finish baking on cookie sheet.

Cajun Chicken Rice – As Heard On WROK

Makes 4 servings Start to Finish: 30 minutes

“This is so easy and delicious that I make it just for me for lunch sometimes.”

2 tablespoons olive oil

1 lb medium sized shrimp – peeled and tails off

Cajun seasoning – to taste

3 cloves garlic

1 cup cherry tomatoes – halved

1/2 cup green onions – diced

2 cups cooked rice

1/2 teaspoon salt

1/4 cup water

1/4 cup slivered almonds

1)  Heat olive oil in a large skillet.

2)  Season shrimp to taste (generously) with cajun seasoning.  Add to olive oil and cook until no longer clear – about 3 minutes.

3)  Add garlic, tomatoes, and green onions.  Cook an additional minute.

4)  Add rice, salt and water.  Continue to cook until rice is cooked through and everything is thoroughly combined.  About 3 more minutes.

5)  Add almond slivers and serve.

Thai Peanut Chicken – As Heard on WROK

Makes 4 servings Start to Finish: 30 minutes

“I often get requests for Thai recipes, but I’ve never made the time to come up with one that didn’t have “any grocery store” ingredients.  This week, I finally did and the results are delicious.  In fact, Lily’s exact words were “delicioso.” Not sure where she’s learning Italian.”

2 boneless skinless chicken breasts – cut into bite-size chunks

1/4 cup soy sauce

1 tablespoon honey

1/2 lime – juice only

3 cloves garlic – minced

1 tablespoon heaping creamy peanut butter

1/2 cup lighly salted peanuts

1 tablespoon sesame seeds

3 cups cooked rice

1)  In a small bowl, combine soy sauce, honey, lime juice, minced garlic, and peanut butter.  Whisk together until peanut butter is dissolved.  Add chicken to marinade.  Set aside or cook immediately.

2)  Heat a medium size skillet over medium heat.  Pour chicken and sauce into skillet.  Cook for 8 – 10 minutes or until chicken is no longer pink.  Stir often.  Add in peanuts and sesame seeds for the last 2 minutes of cooking.

3)  Serve over rice.

Crock Pot Turkey & Black Bean Chili – As Heard On WROK

Active Prep Time: 20 minutes  Cook Time: 6 – 8 hours

“My family actually liked this alot.  They are very particular about their chili, but this one is delicous and a nice switch from regular.”

 

1 lb ground turkey

1 14.5 ounce can black beans – not drained

1/2 onion

4 cloves garlic

1 15-ounce can tomato sauce

1 14.5 ounce can diced tomatoes – not drained

2 tablespoons chili powder

1/2 teaspoon cumin

/8 teaspoon cayenne pepper

1/8 teaspoon black pepper

1/2 teaspoon salt

1)  In a large pot, brown 1 lb of ground meat with onion and garlic.  Drain and add to crock pot.

2)  To crock pot, add tomato sauce, diced tomatoes, black beans and seasonings.

3)  Stir ingredients, cover and cook on low for 6-8 hours

Turkey Tacos – As Heard On WROK

Makes 4 servings Start to Finish: 30 minutes

“This is on my top 10 favorite list of good eats.”

1 lb ground turkey

1/4 teaspoon cayenne pepper

1/2 teaspoon salt

1 teaspoon chili powder

2 teaspoons cumin

1/2 lime – squeezed

************************

Pico:

3 Roma tomatoes – seeded and diced

1/2 lime -squeezed

1/4 cup diced red onions

1/2 jalapeno pepper – very finely diced

1/2 cup cilantro – chopped

*******************************

1 package taco size flour tortillas

2 avocados – sliced

1)  Brown and drain turkey.  Add seasonings and lime juice.  Stir well and remove from heat.

2)  Combine all ingredients for pico.

3)  Heat tortillas and serve turkey on tortillas with pico and avocado slices.

Pepperoni Pizza Pinwheels – As Heard on WROK

Makes 4 servings Active Prep Time: 30 minutes  Freeze Time: 15 minutes Bake Time: 20 minutes

I don’t recommend making this on a super busy night, but it is definitely worth making and it’s fun food for your kiddo’s.”

1 tube refrigerated pizza crust

1/4 cup ranch salad dressing

1 1/2 cups mozzarella cheese – shredded

1 24-ounce bag pepperoni – chopped into quarters (leave 1/2 for salad)

2 green onions – finely chopped

1 jar pizza sauce

 

1)  Preheat oven to 350 degrees.

2)  Fold out pizza dough.  It should be a rectangle, if not slightly roll into a rectangle.

3)  Spread ranch dressing evenly over dough.  *This is a secret ingredient that totally makes this dish.*

3)  Sprinkle 1 1/2 cup of mozzarella, 1/2 of pepperoni quarters, and green onions over entire rectangle.

4)  Roll tightly from the long side of the rectangle.  Freeze roll for 15 minutes for better handling.

5)  Remove from freezer and slice into 1/2 inch rolls.  Place flat on a large baking sheet.  Bake for 20 minutes.

6)  Serve with pizza sauce for dipping.
